As promised here is my chicken soup recipe which I recently posted on instagram. I used chicken drumsticks because I was trying to be thrifty... you can use a whole chicken if you like. I made this because I was feeling very unwell and wanted something nourishing and warming. When you have a cold it's important to keep your fluids up and to choose foods high in vitamin C, protein and iron to help support your immune health. I used what was on hand in my pantry, took a short walk to my local butcher and the soup turned out great!

Chicken, mushroom & miso soup

Serves 5-6

Ingredients

  • 1 1/2 tbs olive oil

  • 2-3 cloves garlic, diced

  • 3-4 shallots, diced

  • 2 tsp ginger, diced

  • 1 carrot, peeled and diced

  • 1 tbs chilli flakes

  • 8 chicken drumsticks

  • 2 tbs sweet miso paste

  • ½ cup white wine

  • 150g field or shitake mushrooms, sliced

  • 150g enoki mushrooms, trimmed

  • 100g spinach, chopped

  • sesame seeds, for sprinkling

Directions

  1. Bring a saucepan to medium heat with the olive oil.

  2. Add the garlic, shallots and ginger and cook until softened. Add the carrot and chilli flakes and cook until just softened.

  3. Add the chicken drumsticks and cook for a few minutes, turning, to lightly brown. Add the miso and the white wine.  Bring to high heat and cook for 2-3 minutes to reduce the wine before adding water to cover the chicken. Bring to boil before lowering to a simmer for about 30 minutes. Stir occasionally and scoop off any foamy scum for the top.

  4. Once the chicken is cooked and falling off the bone, add the mushrooms and place the lid on, cook for 5 minutes. Stir through the spinach just before serving. Sprinkle over your sesame seeds. Enjoy!
