Peanut Crunch Protein Balls

Ummmm did someone say PEANUT BUTTER?

These protein balls are completely vegan and super easy to make - All you need is a mixing bowl and a fork!

With about 8g of protein in each ball, healthy monounsaturated fats and fibre these balls are the perfect mid-morning or afternoon snack.

Combining protein, fats and fibre will help you control blood sugar levels, keep you feeling full and help you concentrate. Plus, these little guys are extremely tasty!

Peanut Crunch Protein Balls

Serves 8

Ingredients

  • 130g crunchy peanut butter
  • 1 cup desiccated coconut
  • 1/4 cup roasted & salted peanuts, roughly chopped
  • 1 1/2 serve vanilla vegan protein powder

Method

1. Combine all the ingredients in a mixing bowl and use a fork to combine. Add 1 tablespoon of water if the mixture is very crumbly, this will depend on how dry your peanut butter is.

2. With slightly wet hands roll into 8 large balls. Place in the refrigerator for 20 minutes to set.
