Halloumi, tomato & farro salad with basil & walnut pesto

This delicious halloumi, tomato, watercress and farro salad is the perfect summer side. Bring it along to your next BBQ but remember to keep an eye on it to make sure no-one steals too many pieces of halloumi.

Add some lentils and take this to work for a delicious and nutritious lunch filled with plant-based protein.

Halloumi, tomato & farro salad with basil & walnut pesto

Serves 6-8

Ingredients

  • 250g halloumi, sliced

  • 200g variety of tomatoes, sliced or chopped

  • 150g watercress, or rocket/baby spinach

  • 1 small cucumber, ribboned

  • 1 cup cooked farro

  • salt & pepper

Walnut & Basil Pesto

  • ½ cup walnuts

  • 1 bunch basil, leaves picked

  • ¼ cup EVOO

  • Juice of 1 lemon


Method

  1. Add 1 cup farro, pinch salt, 1/2 tsp onion flakes and 1 1/2 cup of water to a sauc pan and bring to boil. Lower to simmer and cook for about 25 minutes until the farro is cooked and absorbed the water. Cover and stand for 5 minutes.

  2. Bring a frying pan to medium high heat and fry the halloumi for 2-3 minutes on each side, until golden brown. Place on paper towel and allow to cool slightly. Alternatively fry the halloumi on the BBQ.

  3. In a mortar and pestle grind the walnuts and basil, adding olive oil and lemon juice gradually, until you get a consistency you like. Add salt and pepper to taste. Add extra olive oil. Grind until it is a chunky pesto, adding more olive oil and lemon juice to loosen the mixture.

  4. Toss the all the salad ingredients together and then evenly dollop over the pesto. Drizzle over a little extra olive oil and lemon juice.
