Broadbean, egg & avocado salad

This fresh and healthy spring salad has eggs, greens, broadbeans and avocado. It is full of fibre, protein and good fats.

Broadbean, egg & avocado salad

Serves 4

Ingredients

  • 2 cups rocket/endive

  • 5 eggs, boiled and peeled, sliced

  • 150g broadbeans, cooked and peeled

  • 1/4 cup fennel, finely shaved

  • 1 avocado, diced

  • 1 tbs toasted sesame seeds

  • 50g goats cheese

  • Olive oil

  • Lemon juice, to taste

  • Salt & pepper, to taste



Method

  1. Place the washed greens in a large salad bowl.

  2. Top with the eggs, broadbeans and fennel. Sprinkle over the avocado and sesame seeds and crumble over the goats cheese.

  3. Drizzle over the olive oil and lemon juice. Add salt and pepper to taste.

This is also lovely with blanched green beans or sauteed asparagus. Perfect as a healthy take to work lunch or as a side with roast chicken.
