Brocolli, Leek & Bean Soup

Jaime Oliver inspired this delicious Brocolli Soup with cream ricotta. I went ahead and added some leeks, sage and canellini beans to make it my own.

Soup is a great way to get in a lot of vegetables and a fantastic excuse to buy a fresh loaf of sourdough in my opinion. The beans and ricotta give this meal a good amount of protein to help keep you feeling full.

Brocolli, Leek & Bean Soup

Ingredients

  • Olive oil
  • Butter, salted
  • 2 leeks, sliced
  • 2 cloves of garlic, crushed
  • 1 handful of fresh sage
  • 2-3 heads of brocolli chopped
  • vegetables stock
  • 1 can canellini beans, drained and washed
  • Ricotta
  • Lemon juice
  1. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a heavy based saucepan. Saute the leeks with fresh sage and garlic, stirring until softened, about 5 minutes.
  2. Add 2-3 heads of chopped brocolli and then fill half way with vegetable stock. Cook for about 20 minutes
  3.  Add the beans and heat through for about 5 minutes. Blend taking care as it is quite hot.
  4.  Serve with a dollop of ricotta and a squeeze of lemon juice - oh and some sourdough of course!
