Cauliflower & Ricotta Omelette

This deliciously creamy omelette is a great way to sneak in some veggies as well as being a quick and easy breakfast. It’s kind of like baked cauliflower and cheese sauce ( one of my all time favourite sides) but for breakfast! What is not to love?

Many people think that white vegetables like cauliflower and potatoes are lacking in nutrients. Don’t let the colour fool you though - these veggies are full of Vitamin C, potassium and fibre, to name a few.

The combination of protein and fibre are great to start the day with, keeping you feeling fuller for longer.

Cauliflower is super cheap at this time of the year so please give this one a go!  I love to have this one with some buttered toasted sourdough.


Cauliflower & Ricotta Omelette

  • ½ cup Cauliflower, finely chopped or grated

  • 1 Spring onion, finely sliced

  • 2 Eggs

  • 1 tablespoon Ricotta

  • Olive oil


In a small bowl beat the eggs and add a pinch of salt. Bring a small saucepan to medium heat, coat with olive oil and then pour in the eggs.

Sprinkle over the cauliflower, spring onion and ricotta. Cover with a lid and cook for about 3-5 minutes.Shake the pan occasionally to check that it has not stuck.

Slide the omelette out of the pan and eat!
