Beetroot Walnut & Feta Pesto

You know when you have something delicious in the house and while you may have enough for a week... you eat it over the course of the day?! That is what happened when I made this for the first time.

Because of this beetroot dip eating frenzy I can tell you with good authority this goes well with the following foods *wink wink*

  • Toasted cheese sandwhiches
  • Curried Egg Sandwhiches
  • Crackers and pickles
  • Bacon and eggs
  • Leafy green salads
  • Roast chicken & potatoes
  • Veggie chips

This dip is packed full of healthy fats, vitamin C, fibre and potassium. Beetroot also contains antioxidants to help fight free radicals and nitric oxide to help lower blood pressure - it's a superfood!

Beetroot Walnut & Feta Pesto

  • 1 large beetroot

  • 1 tablespoon Cumin

  • 1 teaspoon Peppercorns

  • Juice of 1 lemon

  • ½-¾ cups Extra Virgin Olive Oil

  • 1 clove of garlic

  • 60g of Feta

  • ⅓ cup of walnuts


Preheat your oven to 200͒͑͐C

  1. Wash your beetroot and wrap in aluminium foil. Bake for 1 hour.

After it has cooled, wearing gloves, peel off the skin of your beetroot and chop into cubes.

2. Dry roast your cumin & peppercorns by tossing in a very hot fry pan for 3-5 minutes, taking care not to burn.

3. Pour into a mortar and pestle and grind until fine.

4. Into the food processor goes half of the beetroot, most of the cumin, the lemon juice and garlic. Pulse until smooth. Add the rest of the beetroot, 50g of the feta, walnuts - drizzling in more olive oil as you need it. You may need to scrape down the sides of the bowl.


Crumble the remaining feta and sprinkle the ground cumin over the top when serving like a dip or on toast, otherwise you can smear it on anything you like!

Can be stored refrigerated in an air-tight container for up to 5 days.
