Easy Banana Oat Cookies

This is my go to cookie recipe for when I know I have a busy week ahead. I prefer not to buy pre-made packaged muesli bars if I can help it and these little rippers take hardly any time at all to whip up!

These little cookies are a great energy booster - with complex carbohydrates, fibre and good fats. They make a fantastic treat with a cup of tea, a magnificent mini  pre-workout snack or are fabulous for your little ones lunchboxes - just no adding nuts!

And do you want to know the BEST thing about them? You can easily whip them up with ingredients you have at home in your kitchen!


Easy Banana Oat Cookies

Makes 8-10

  • 1 banana, mashed
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla essenceor 1/2 teaspoon vanilla bean paste
  • 1 cup rolled oats
  • 1/3 cup dates, pitted and chopped
  • 1 teaspoon cinnamon


  1. Mix all of the ingredients together until combined.
  2. Roll into tablespoon sized balls and place evenly on a greased baking tray
  3. Bake for 10-12 minutes
  4. Leave for a few minutes and then remove to a wire rack to cool

Feel free to swap the dates for sultanas or another dried fruit. You can also add nuts and seeds if these are not going into a school lunch box
