Earl Grey Chia Pudding

Earl Grey Chia Pudding

This little beauty is the answer to your summer time tea craving. A chilled chia pudding with beautiful fresh apples, honey and greek yoghurt - makes a refined and refreshing change to your hot cup of tea. This would also be a beautiful dessert.

Full of fibre, good fats and protein (thanks to the greek yoghurt) this is a super healthy breakfast or dessert.

This recipe also works beautifully with blueberries instead of apples - and coconut yoghurt and milk instead of dairy. 

I like to buy apples from my local farmers market or independant grocer - they always taste so much juicier and so much sweeter! Often this is because they have not been in storage for months before ending up in my fruit bowl. Plus you will be supporting local businesses - win!

Chia pudding are so quick and easy to make - this can easily be made in advance and popped in a jar or container to be taken for a mid-morning or afternoon treat or breakfast.

Earl Grey Chia Pudding

Serves 1

  • 1 teaspoon Earl Grey tea leaves

  • 2 tablespoons Chia seeds

  • 1 tablespoon Milk

  • 1 tablespoon Greek yoghurt

  • A little honey, for drizzling

  • 1/4 Pink Lady apple, thinly sliced


1. Pop the kettle on and make a cup of Earl Grey - let steep for 3-5 minutes.
2. Tip the chia seeds into your bowl and pour in 1/3 cup of infused Earl Grey and the milk - mix thoroughly with a mini whisk or a spoon to ensure the chia seeds do not clump together. Keep an eye on the mix for the next 5 minutes, stirring occasionally.
3. Cover and sit in the fridge for 15 minutes - use this time to drink the rest of that cup of tea!
4. When ready to eat scoop on the yoghurt, add the apple slices and drizzle over the honey.
