Broccoli, Mushroom & Crispy Sage Soup

This delicious and nutritious soup packs a punch - high in iron, Vitamin C, B vitamins and fibre it is perfect for winter.

Best cooked up in a heavy based saucepan or pot. You will also need a small frying pan

Broccoli, Mushroom & Crispy Sage Soup

Serves 4

Ingredients

  • Olive oil - a drizzle
  • 2 cloves garlic, crushed
  • 1 small bunch of fresh sage 
  • 3 heads of brocolli - chop them up - stems and all!
  • 2 cups mushrooms, chopped
  • 6 cups vegetable/chicken stock
  • 1 cup leafy greens like spinach, kale or silverbeet
  • 1 lemon, quartered
  • Extra virgin olive oil
  • Crusty bread

1. Cook the garlic and half of the sage on medium heat until browned. Add the broccoli, mushrooms and stock, bring to boil and then simmer for about 10 minutes. Stir occasionally.

2. Add the chopped leafy greens, cover and simmer for a further 10 minutes.

3. While the soup is simmering grab a small frying pan and on medium heat with some extra olive oil, fry the rest of the sage leaves until crispy.

4. Using a bar mix or blender, blend the soup in batches until thick and creamy.

5. Bowl up, top with the sage leaves, drizzle with lemon juice and extra virgin olive oil and serve with the bread on the side.
